Venison Chili

Halleluyer!!!! Plateau BUSTED!!!!  I am FINALLY out of the 190's and out of the 40's for pound left to lose! I am so excited!!!
I made some venison chili last night and if I do say so myself, my chili is very good.One day I decided to add a can of Rotel tomatoes and the acidity and flavor of them really adds a lot! Now I always use Rotel in my chili! Here's my recipe:
 
Venison Chili
1 lb ground deer meat
1 sweet onion, chopped
1 packet of Chili-O
1 14 ounce can of diced tomatoes
1 can of Rotel tomatoes ( I use the kind with the chili pepper)
1 can of dark red kidney beans (undrained)

Saute the onions in a tablespoon of olive oil. Add in ground meat and brown. There will be nothing to drain since venison is so lean. Sprinkle chili packet on top of meat and stir well. Add in both kinds of tomatoes and the undrained kidney beans. Cover and simmer for at least 10 minutes, stirring often to prevent sticking.
Serves 6
1 cup is 233 Calories

I often serve cornbread muffins with this and have found a little trick to lower the calories some. I use a box of Jiffy cornbread mix and use low fat milk to shave off a few calories. I make 10 smaller muffins instead of the 6 that the package calls for so this gives me a muffin for only 101 calories!
