Yay! So glad to see the numbers going down again! Just praying for nice weather so I can get outside and walk!!!
I have a huge ham bone left over and I am going to make stock with it to be used to season vegetables and be the base for soup. You can do this with any meat - even rotisserie chicken leftovers. Ham is especially scrumptious, though! Here's how I do it.
Ham bone (or any meat)
1 gallon of water (will vary depending on the amount of meat)
Stock pot
Gently boil ham in water in covered pot until meat easily comes away from the bone. Add more water if needed. Remove pot from heat and allow stock to cool some. Remove ham bone and any meat. Put pot in refrigerator for a few hours. When stock is cold, all the fat will rise to the top and harden, Remove the fat on top. What you have left is DELICIOUS fat free stock - ready to be used or to be frozen for later use.
Note: You may strain this stock to remove any small pieces of meat.
